Climatic Conditioning
From Schroeter of Germany and Mauting of the Czech Republic, an extensive range of climatic maturing systms are offered for housing one to one hundered standard wagons (a standard wagon measures 1000 mm x 1000 mm x 2000 mm). Climatic maturing can be undertaken using purpose built stainless steel cabinets built to the customer's production requirements, or, an existing room can be modified to achieve the same results.
Climatic maturing cabinets are for the rippening, drying and storage of salamis, sausage, bacon and ham type products. The designs offered focus on efficient and cost effective operation and increased product qulaity. The temperature and humidity are controlled automatically using a basic control system through to a pc based recipe management system
